Vallindras Distillery
The distillery with a more than 100 hundred years tradition can be found in the very heart of Naxos Island in the village of Chalki. It produces a traditional liqueur and there is also a museum with a demonstration of the original process of distillitaion of this delicious beverage.
The Kitron liqueur is made of the leaves of the kitron tree, of which the fruits are similar to a lemon or a grapefruit. The first distillery was founded by Marcos Vaalindros in 1896 in the very vilage of Chalki.
Liqueur production: The healthy leaves of the kitron tree are picked from the end of October till February. Then the leaves are spread out in a dry room and sprinkled with water. Picking the leaves is a lengthy and difficult task because of the prickles on the tree. One needs to be careful when picking the leaves, as the excessive picking would make the tree die. Soon after being picked, the leaves are placed into a boiler with water and pure alcohol. Depending on the quality of the first distillate, a second and a third distillitation may be carried out. This is how the liqueur becomes stronger. Water, sugar and a colouring are added to the distillate. Based on the colour, three types of liqueur are distinguished: the weakest one is the green, the moderate one is white, and the strongest liqueur is yellow.
Today there are about 2 000 kitron trees on Naxos, most of them in the regions of Chalki, Eggares and Chora, Melanes and Apollonas.
